This Avocado Toast Mash-Up, is my version of the classic Avocado Toast. As good as a poached egg on top looks, I donât get particularly excited of runny eggs. *crickets chirp* Youâre gasping arenât you? All judgements aside, I promise this is a pretty awesome version of an avocado toast and donât be shy to let me know what you thought of it in the comments!
“Youâre not a real housewife if you canât make a sandwich”
My partner loves his housewife jokes right. One of them is that âyou’re no a proper housewife if you can’t make a sandwichâ. Therefor I don’t make my sandwiches on anything but sandwich bread, because I’m an asshole and would do anything to avoid being a ‘good little housewifey’.đ
Other than the fact I like to defy my partner any chance I get, it’s not very common for a Dutchie to use the typical sandwich bread. Don’t get me wrong. We love our bread, but there’s so much more out there than sandwich bread!! Back in the Netherlands weâve got so many different options, I need a rehab facility to get used to the little bread options we have here in Mackay. (Guess I will have to learn how to make it myself.)
ANYWAY, I was very pleased to find these Turkish bread rolls that have made my breakfasts and lunches a game changer here!
Hereâs my twist on the classic smashed avocado toast!
For 2 sandwiches we are going to need:
- 2x Turkish bread rolls
- 1 avocado
- 100 gr smoked salmon
- 100 gr crumbed feta cheese
- 2 tsp lemon juice
- 2 tbsp dukkah
- Pinch of alfalfa sprouts
- Pinch of snow pea sprouts
- Salt & pepper to taste
- Roasted pumpkin seeds (optional)
Optional as a side:
- 100 gr mushrooms
- 1 tsp minced garlic
- 1 tbsp freshly chopped parlsey
- 1 tsp maggi seasoning
- Ground black pepper to taste
Because avocado is quite blend, I like to spice it up by adding some saltiness of the feta cheese and smoked salmon. To add some crunch, top it off with snow pea sprouts and alfalfa, but you can use anything you like really! Rocket, arugula (whatever name you use in your counrty) goes really well with it too.
Play with Toppings!
Personally, Iâm a huge fan of roasted pumpkin seeds. The extra crunch and the earthy flavour of it, gives it a finishing touch if you ask me! Since itâs one of my favorite dish toppers, I usually make a big batch of it, roasting it in the pan with some olive oil and sea salt until they pop like popcorn and store them in a container. Work smarter, not harderđ¤
Another one of those optional things
In general it might not be everyoneâs cup of tea. It certainly is mine though; MUSHROOMS!
As a matter of fact; there are apparently a lot of people that donât like them. Although this may be true, I will share this option for fellow mashroom lovers nonetheless! In my opinion, mushrooms are super diverse and take on any flavour you give it and with this sandwich, itâs served as a side dish. Simply fry them with some garlic, parsley, a little bit of maggi seasoning and pepper. De-licious!
Avocado Toast Mash-Up
Ingredients
- 2 Turkish bread rolls
- 1 Avocado
- 2 tsp Lemon juice
- 100 grams Feta cheese crumbled
- 2 tbsp Dukkah
- pinch Alfalfa sprouts
- pinch Snow pea sprouts
- Salt & pepper to taste
Instructions
- Turn oven to 160 degrees Celcius (or 320F)
- Rub a sprinkle of water over your Turkish bread and place in the oven for 5-8 minutes
- Mash avocado and add lemon juice and salt & pepper
- Layer up your bread with avocado, feta, salmon, dukkah and finish off with the alfalfa and snow pea sprouts
Notes
- You could add roasted pumpkin seeds for extra crunch
- Replace snow pea sprouts and alfalfa sprouts by rocket/arugula
- Add some fried mushrooms, with garlic, parsley, maggi and ground pepper as a side
