Australian Corned Meat

Australian Corned Meat is a slow cooked piece of silverside that is already cured or brined when you buy it in a packet. Because the whole meal sits in a slow cooker for about 8 hours, this is a great meal to make up front. It will only take 15 minutes to prep it all, so especially when you don’t have a lot of time in the evening, this meal is perfect for them busy days. Big bonus is that the kids love it too!

Not only is corned meat delicious on the first day, but also the second day when you put a slice on your sandwich and/or when we make corned meat fritters out of it. This corned meat recipe is traditional how we make it in our home and because it’s such a good left-over meal as well, we always buy a extra big piece of silverside for corned meat fritters the next day.

I didn’t get introduced to corned meat until I moved in with my partner. In the Netherlands we don’t usually prepare pieces of meat this big and to be honest I couldn’t find corned silverside at all when I went back home earlier this year when I wanted to make it for my parents.

Ingredients

For this recipe we will need:

  • +/- 2 kg of silverside
  • 1/4 cup white vinegar
  • 5 small cloves of garlic
  • small bunch parsley
  • 3 potatoes
  • 1 lemon
  • 500 gr pumpkin
  • 2 onions
  • +/- 1½ – 2 liters of water

Instructions Australian Corned Meat

Gather all of the ingredients and cut it into the desired sizes. We always like to cut in up in chunks. This way it won’t cook to mush and it makes it easier when we dish it up as well.

Simply chuck the meat, vegetables, parsley and garlic in the slow cooker.

Wash and squeeze the lemons and leave the peals in the slow cooker as well. Add the water and vinegar and shut the lid. Turn on high for 8 hours.

Strain the ingredients, dish up and garnish with some freshly chopped parsley. Traditionally corned meat is served with white sauce which is made of onion, milk and flour, but we’re personally not a big fan of it, which is the reason I don’t have a recipe for it. If you’re not sweet for white sauce either, gravy or even mango chutney are great alternatives!

Equipment

  • 1 slow cooker

Ingredients
  

  • 2 kg silverside
  • 1/4 cup vinegar
  • 5 small cloves of garlic
  • small bunch fresh parsley
  • 3 potatoes
  • 3 carrots
  • 1 lemon
  • 500 gr pumpkin
  • 2 onions
  • liter water (1½ – 2 liters)

Instructions
 

  • Cut all your ingredients into chunks
  • Put silverside, vegetables, parsley and garlic in the slowcooker
  • Squeeze lemons and leave it in the slowcooker
  • Add water and vinegar until all the ingredients are covered
  • Shut lid and turn slow cooker on high for 8 hours or until meat falls apart
