Personally, I’m a huge fan of the Mediterranean kitchen and these Mediterranean Chicken Meatballs remind me of summers in Greece and the many lovely people that I have met along the way there! Of the three islands I‘ve been to, my favorite was Kefalonia! I was amazed by their hospitality and truly wish there was more of that kind of generosity and kindness around! Complete stranger or not, they will treat you like family and their appreciation for the simply things in life is absolutely refreshing.

The perfect party pleaser
These meatballs are herby, healthy and perfect for tapas parties as a movie night snack or even as post work-out dinner! The freshness of the Tzatziki gives it all the finishing touch.
The Preparation
For this recipe, we‘re going to need:
- Chicken Mince
- Feta Cheese
- Red Onion
- Sundried Tomatoes
- Garlic
- Fresh Parsley
- Fresh Oregano
- Egg
- Breadcrumbs
Joy of fresh herbs
Unlike my mother, I never had green thumbs. Whenever she took a plant inside that died over the winter, I would tell her to just throw it out and buy a new one. However, my mom would not give up and you’ve guessed it: She somehow managed to bring it back to life! Since a couple of years I’m trying to grow my own herbs and veggies and actually manage to keep some of them alive! Honestly, it has its charm to walk into the yard and use your hard work to make your food! (And being a typical tight-arse Dutchie: You’ll save money with having your own veggie and herb garden too!)
Chop all your ingredients finely and mix them in a bowl. Let it sit in the fridge to firm up.
Cooking Instructions
Turn your oven to 180 degrees Celsius (356F) so it can pre heat while you rol the mince into balls. You might want to wet your hands, to prevent them from sticking (too much) and roll them onto your baking rack. Either pour some water into the tray or fill a cake tin with water to put in the oven, preventing the meatballs from drying out.
Place the meatballs in the oven for 20 minutes and make your Tzatziki in the meanwhile. Although I prefer home made Tzatziki, it‘s possible to buy it in the shops! I’m not judging, I can be all about convenience too with the amount of hobbies that I have!😁
Let‘s Feast!
Altogether it might not look like a lot of meat, but believe me; they are filling! Mediterranean Chicken Meatballs, served with some salad on the side, will be enough to serve a family of 4.
Bon appetit, eet smakelijk and enjoy your dinner!
