Herb Crusted Oven Salmon

Looking for a healthy recipe to impress your partner/date/friends or even your kids? THIS. IS. IT. This crispy herb crusted salmon out of the oven, sprinkled with toasted pine nuts is a light and fresh, protein packed dinner. Leaving you with a full belly, without the food coma.


I am definitely wearing my fancy pants today! I just finished my wiggle workout (Zumba), I am feeling sexy and I have just got the perfect recipe to share with you all!🤣 Personally, I eat this dish with a side of sauteed zucchini, some steamed broccoli, and a splash of lemon. When I serve for the kids and hubby however, I serve it with some mashed potato, as it adds a little bit of creaminess to it all😊

Ingredients

For 4 people we will need:

  • 4 pieces of salmon
  • 1/2 cup panko bread crumbs
  • 1 tbsp freshly chopped dill
  • 2 tbsp freshly chopped parsley
  • 1 tsp garlic powder
  • 1 tbsp mayonnaise
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • S&P
  • Pine nuts to sprinkle

Instructions

Turn your oven on to 200°C.

Cover your oven tray with a piece of baking paper and spray it with oil.

In the meantime, add the breadcrumbs, lemon zest, dill and parsley to a bowl and mix together.

Place the salmon pieces on the oven tray. Cover them in lemon juice and the mayonnaise and sprinkle with garlic, salt and pepper. Besides the fact that the mayonnaise is going to make the crumbs stick, it also adds extra flavor to it all!

Lastly, cover the salmon with the herb crumbs and pop it in the oven for 15-20 minutes. This depends on the size of your salmon.

Now because I do this step in big batches, I don’t have a picture at the moment to share at the moment, but the next thing you want to do is to toast your pine nuts in a dry pan until they are golden brown to enhance the flavors. If you use toasted pine nuts as toppings as much as I do, trust me, you will want to make a big batch and put whatever is left-over in a jar for later! It is just one of those little hacks to make your life easier.

Serve your favorite side dishes with this herb crusted salmon, sprinkle with the pine nuts and you’re all ready to go!

  • 1 Oven
  • 1 oven tray
  • 1 Baking sheet
  • 1 Basting brush

Ingredients
  

  • 4 Salmon pieces
  • ½ cup Panko breadcrumbs
  • 2 tbsp Freshly chopped dill
  • 2 tbsp Freshly chopped parsley
  • Zest of 1 lemon
  • 1 tsp Garlic powder
  • 1 tbsp Mayonnaise
  • Salt & pepper to taste
  • Pine nuts to sprinkle

Instructions
 

  • Turn oven on 200℃.
  • Add panko breadcrumbs, dill, parsley and lemon zest into a bowl and mix.
  • Cover an oven tray with baking paper and spray/brush with some oil
  • Place the salmon on the tray and brush with lemon juice and mayonnaise
  • Sprinkle with salt, pepper and garlic powder
  • Push the crumb gently on top to make it stick
  • Place the salmon in the oven for 15-20 minutes, depending on the size of the salmon
  • Toast the pine nuts in the pan until golden brown in the meantime
  • Serve the salmon with your favorite side dishes and sprinkle with the pine nuts
