Stuffed Baby Capsicums

These stuffed baby capsicums filled with cream cheese, bacon and melted cheese are a warm, delicious snack and easy to make! It has been my go-to when I followed a keto diet for a while. Although a while sounds like a long time, the truth is that my keto diet only lasted for a month. For anyone who is not familiar with Keto; it’s a high fat, high protein and zero sugar and carbs diet. Which means lots of meat, veggies and fat (like cheese for example), but not the bread, pasta, potatoes and rice.
Being half Asian, I was okay with going without pasta and bread as I don’t eat a big deal of that as it is. When it comes to rice however, it was pure torture😂. And anyone who has the guts to say that cauliflower rice is a great substitute is either a liar or a rabbit😝. Does anyone else have this problem or is it just me? Or if you are following a keto diet now, how are you coping?

Without leading you further astray, these stuffed baby capsicums never left my personal snack menu and are also really fun to serve as appetizers!

Let’s get started!

Ingredients Stuffed Baby Capsicums

  • 200 gr baby capsicums, halved
  • 100 gr diced bacon
  • 1/4 onion, finely diced (+/- 30 gr)
  • 1 tsp garlic powder
  • 150 gr cream cheese light
  • 50 gr shredded cheese
  • small bunch of freshly chopped parsley

Instructions Stuffed Baby Capsicums

The first step is to fry your bacon and onion. Not only does this make it easier to mix with the cream cheese because it’s warm, bacon and onion just tastes better when it’s fried, I reckon🥹.

Place cream cheese, garlic powder, parsley, salt and pepper together with the bacon and onion in a bowl and mix together.
Make sure you keep some parsley aside for garnish.

Line an oven tray with baking paper to minimize the mess and cleaning (because I’m lazy) and fill the capsicums with the cream cheese and bacon filling.
Top off with some shredded cheese and pop in the oven on grill setting for about 10 minutes, or until cheese is golden brown.

Garnish with the left-over parsley and that is it, y’all! Time to hook in!!😍

Equipment

  • Oven
  • 1 oven tray
  • Baking paper
  • 1 Frying pan

Ingredients
  

  • 200 gr Baby Capsicums halved
  • 100 gr Diced bacon
  • ¼ Onion (+/- 30 gr)
  • 1 tsp Garlic powder
  • 150 gr Cream Cheese Light
  • 50 gr Shredded cheese
  • small bunch Parsley
  • Salt and pepper to taste

Instructions
 

  • Turn oven on 200℃ on grill
  • Heat a frying pan with a little oil and bake the diced bacon and onions for about 5 minutes or until the bacon is a bit crispy
  • Place cream cheese, garlic powder, parsley, bacon & onion and salt and pepper to taste in a bowl and mix together
  • Line an oven tray with baking paper and place the halved and seeded capsicums on it
  • Fill the capsicums with the cream cheese and bacon mixture
  • Top off with shredded cheese
  • Place into the oven for +/- 10 minutes or until cheese is golden brown
  • Garnish with some freshly chopped parsley
