Mushroom Brie Sandwich

Sometimes I go through stages where I really crave for bread. Usually, I don’t eat a whole lot of bread, but when I do, it’s gotta be GOOD! This is where this mushroom brie sandwich comes in… The melted brie on top of a warm Turkish bread roll that has been buttered with herb butter, topped off with avocado, pan fried mushrooms, crunchy pumpkin seeds and snow pea sprouts always seems to hit the right spot, especially during lunch!

Ingredients:

For the very basics of all of this deliciousness we need:

  • Turkish bread roll (for in the oven)
  • Brie
  • Herb butter
  • Mushrooms
  • Parsley
  • Maggi seasoning
  • Garlic

Instructions

Turn the oven on 180℃ and put the bread in the oven for about 2 minutes. This allows the bread to get warm, so the butter is easier to spread.

In the meantime, cut the mushrooms in quarters and fry them in a frypan with a little bit of oil, garlic, a little splash of Maggi seasoning, pepper to taste and chopped parsley. (I don’t recommend adding salt as the Maggi seasoning is already salty.)

Cut 4 slices of the brie and lay on the bread roll. Pop it back in the oven until the cheese has melted. This usually takes about 5 minutes.

Now this is the best part about sandwiches: You can put anything on it you like. There are no boundaries for your imagination when it comes to sandwich toppings. Personally, my favorite toppings for this particular mushroom brie sandwich are avocado, microgreens and/or snow pea sprouts and toasted pumpkin seeds. (I toast the pumpkin seeds in a big batch and keep them in a glass container for whenever I want them. This saves me time and dishes later and they’re delicious in salads as well) But to be honest? Even without the toppings, it is one hell of a scrumptious sandwich!🤤

Mushroom Brie Sandwich

Ingredients
  

  • 2 Turkish bread rolls
  • 8 slices Brie
  • 2 tbsp Herb butter
  • Mushrooms
  • 1 tsp Parsley
  • 1 tsp Minced garlic
  • 1 tsp Maggi seasoning
  • 1 Avocado sliced (optional)
  • 2 tbsp Roasted pumpkin seeds (optional)
  • Snow pea sprouts (optional)

Instructions
 

  • Turn oven on 180℃ and get the herb butter out of the fridge to make it easier to spread
  • Cut the mushrooms into quarters, chop the parsley and cut the brie and avocado into slices.
  • Heat up a pan with a little bit of oil and fry the mushrooms with the garlic, parsley and Maggi seasoning for about 2 minutes.
  • Once oven reached desired temperature, put the Turkish bread rolls into the oven for 2 minutes, allowing it to warm up, so the butter is easier to spread.
  • Spread 1 tbsp of herb butter on each sandwich, lay 4 slices of brie on each and put back into the oven for about 5 minutes, or until the cheese has melted.
  • Once out of the oven, top the sandwich with avocado, mushrooms, roasted pumpkin seeds and the snow bean sprouts
  • Enjoy!!
