This juicy and tender meatloaf with a smokey BBQ glaze is the way to an Australian family’s heart!
Whenever I get myself into trouble with my hubby or he’s having a bad day; Meatloaf is the answer🤣 Somehow the barbecue-y, savory flavors on top of a bed of mashed potato with vegetables on the side hits every single mark for him to make his day.
Growing up in the Netherlands, meatloaf is not very popular, so I never had it, or made it until my partner requested it one day. And I had absolutely no clue what to do. However, there is something that I’m pretty good at: Improvising. Us Dutchies love meatballs, so I took the recipe for my meatballs and made a meatloaf out of it😅. And then I modified it over the years by adding smoked paprika and the capsicum. Just one of my ways to add more veggies into a dish that the kids were willing to eat. (And it just looks so pretty when it’s cut🤩) So can I say this is a ‘classic meatloaf’ recipe? Absolutely not! But tasty? Guaranteed!!
Ingredients
For the meatloaf (4 people) we’ll need:
- 1 kg beef mince
- 2 eggs
- 100 gr breadcrumbs
- 4 tbsp Dijon mustard
- 4 tbsp sweet soy sauce
- 1 tsp cayenne pepper
- 1 tbsp smoked paprika powder
- 1 onion diced
- 2 tbsp minced garlic
- 100 gr capsicum diced (optional, but it tastes so good and looks pretty too!)
- salt & pepper to taste
Glaze:
- 2 tbsp bbq sauce
- 1 tbsp tomato sauce
- 1 tsp liquid smoke
- 2 tsp brown sugar
Instructions
Pre-heat the oven to 180 degrees Celsius.
In a bowl, mix the beef mince, together with the breadcrumbs, egg, onion, capsicum, minced garlic, cayenne pepper and smoked paprika powder. Once it’s all mixed, grab the mix and throw it in the bowl really fast to slam the air out of it. This will prevent it from falling apart when you slice it.
Mix the ingredients for the glaze.
Spray oil your cake tin. (Or brush with oil, whatever you have on hand) and divide the meatloaf mixture in the tin and press it down tight.
Brush the meatloaf with the glaze and put in the oven for 45 minutes in total. After +/- 20 minutes, give the meatloaf another layer of glaze. whatever glaze is left-over, you can brush on when the meatloaf is finished.
Use the time while the meatloaf is in the oven to make your mashed potatoes and your favorite vegetables.
Optionally, sprinkle with freshly chopped parsley and serve with your favorite side dishes!

- Cake tin
- Spray oil
- Baste brush
Ingredients
Meatloaf
- 1 kg beef mince
- 2 eggs
- 100 gr breadcrumbs
- 4 tbsp Dijon mustard
- 4 tbsp sweet soy sauce
- 1 tbsp sweet smoked paprika powder
- 1 tsp cayenne pepper
- 2 tbsp minced garlic
- 1 onion finely diced
- 100 gr capsicum finely diced
Glaze
- 2 tbsp barbecue sauce
- 1 tbsp tomato sauce
- 1 tsp liquid smoke
- 2 tsp brown sugar
Instructions
- Pre-heat the oven to 180℃
- In a bowl, combine all the ingredients for the meatloaf and mix it together. Once all is mixed, throw the mixture hard into the bowl a couple of times to 'throw out' the air.
- Cover the cake tin in spray oil
- Put the meatloaf mix in the cake tin and press firmly
- Mix the ingredients for the glaze
- Use the basting brush to put about half of the glaze on the meatloaf
- Put the meatloaf in the oven for 20-25 minutes and brush the remaining half of the glaze on the meatloaf
- Put the meatloaf back in the oven for 20-25 minutes
- Optionally, sprinkle with freshly chopped parsley and serve with mashed potato and vegetables
